Propyl gallate

Propyl gallate is produced from propanol and gallic acid.

Chemical structure and properties.

Propyl gallate's chemical name is propyl 3,4,5-trihydroxybenzoate and is also known as gallic acid, propyl ester and N-Propyl gallate. It is an ester formed by the condensation of gallic acid and propanol.

The molecular structure is C10H12O5 with a molecular mass of 212.20 g/mol. Propyl gallate is a white crystalline powder with a melting point of 150oC.

Functionality in food

Propyl gallate is used as an antioxidant in foods containing oils and fats.
