Monopotassium glutamate is often just called potassium glutamate. It is the potassium salt from glutamic acid. Commercially, potassium glutamate is produced from carbohydrates by bacterial fermentation. It can also be prepared from vegetable protein, such as gluten or soy protein.

Potassium glutamate is used as a flavor enhancer. Potassium glutamate has the specific umami taste and enhances many other flavors. It reduces the amount of salt needed in products.


Monopotassium glutamate is mainly used in low sodium products.
